6 Ommegang In Greek mythology, Aphrodite rises from the foam of the waves of the sea, enchanting all who see her, and inciting thoughts of love and lust where ever she goes. We could hardly say it more eloquently. Our Limited Edition Aphrodite Ale is ethereal, intriguing and mysterious – as the Goddess Aphrodite must have been. Aphrodite has champagne-like carbonation, much as the foam of the waves of the sea. Plus enchanting flavors with whispers of raspberry and pear, and hints of funk and tartness created by the Brett yeast. The refreshing dryness comes from the unusual combination of Ommegang and Brett yeasts, and incites feelings of love and thirst, though we don’t know about lust. Grains of paradise are infused into the nectar, and when poured Aphrodite is crowned with a luxuriously shimmering rose-pink head.

7 Bell's The last of a series, Batch 10,000 Ale looks back to our home-brewing roots. After combing through the catalogs of many, many malt & hop suppliers, our brewers used over 100 different malts, grains, and other fermentables, and followed them up with a blend of 60 different hop varietals between the kettle additions and dry-hopping. The resulting beer presents a deep, chocolate brown hue and offers roasted & caramel notes from the malts mixed with an assertive hop character. Sharply bitter, the beer possesses a full mouthfeel without being heavy & will withstand aging in your cellar, if you prefer.

9 Bell's Aged in bourbon barrels for 8 months, Bourbon Barrel Aged Batch 9000 Ale takes the sweet caramel, molasses, and dried fruit aromas of its predecessor and layers on oak, vanilla, and bourbon notes. The barrel contribution is definitely present but doesn’t try to overwhelm the underlying beer. The goal is to showcase the beer, not the bourbon, with the result being an exceptionally smooth beer with complexity & depth that defies easy classification as an imperial stout or barleywine or otherwise.

7 Sierra Nevada Our award-winning barleywine boasts a dense, fruity bouquet, an intense flavor palate and a deep reddish-brown color. Its big maltiness is superbly balanced by a wonderfully bittersweet hoppiness.

6 Dogfish Head A strong ale containing an Italian heirloom grain called Cappelli Senatore, along with pomegranate juice, raisins, and hazelnut flour, together with 3 types of honey: chestnut, wildflower, and clover. The brew was then spiced with several hop flowers, Gentian root and tree resin (think Myrrh) in the kettle. To simulate fermentation in a bronze vessel (which possibly would have been what the Etruscans used), we actually tied a bronze plate inside our modern stainless fermenter which was suspended in the wort as it fermented. The aroma is dominated by pomegranate and spice from the yeast. The flavor is an intriguing interplay between the tangy pomegranate fruit and nuttiness from the hazelnut flower. One can definitely envision sipping this unique brew while relaxing on the Mediterranean coast.

With a deep purple full body and a long-lasting lacy pink head, this ale is both attractive and delicious! It is tart and fruity, like our brewers! The subtle bitterness of Hallertau and Saaz hops shines through the fruit forward flavor and sets the palate aglow. (30 IBUs). This tasty brew has smooth but noticeable alcohol warmth. Belgian yeast gives this brew a characteristically dry spicy finish. The beautiful interplay of fruit, spice, and alcohol is complimented by a soft malt profile, and a high level of carbonation.

9 Founders Made to Celebrate Founders 15th Anniversary, Bolt Cutter Barley Wine is an American barley wine that pours deep copper color and is strong, sweet and malt-forward, with a spicy complexity. Typical of the style, it is very cellarable. The final product is a blend using beer that was aged in Bourbon barrels, some from aged maple syrup Bourbon barrels and some from standard fermentation. After blending, the beer was allowed to mature in bottles and kegs for a few months before releasing.

This new combination creates the sensation of sipping on a sweet Bourbon out of a grapefruit.

6 Griffin Claw Our Bourbon Imperial Pumpkin (BIP) is our classic Screamin’ Pumpkin Ale (brewed with cascade hops, allspice, ginger, nutmeg, cinnamon) but brewed stronger and aged in bourbon barrels for 6 months. Results are a 9% ABV/15 IBU beer with rich oak-vanilla flavor with a oak barrel nose. The blending with the spices, hops, and malt creates in our opinion the ultimate pumpkin beer.

8 Kuhnhenn Gold to amber color. Strong earthy honey aroma, medium sweetness, honey dominates over the malt character. Pours a nice head. This mead is made from Michigan Star Thistle honey. Braggot is made from 2/3 honey and 1/3 malt. It required 1 year of aging for this mead to reach maturity. This Braggot will handle age beautifully. We recommend you try a bottle today and an aged one in a few more years. This mead is carbonated naturally in the bottle, so there will be a yeast sediment int he bottom. Recommended serving temperature is 50 F.

8 Arcadia We’ve taken our English-style barley wine and aged it in Bourbon barrels for 12-18 months, where it undergoes a transformation into a more complex, layered ale with structure for years. Hazelnut-claret in color, it pours syrupy and raises and off-white head. The aroma reveals scents of nutty malt, pralines, toffee, and hints of milk chocolate. The flavor follows suit, but brings to the forefront a bold Bourbon presence, rounding and full-bodied. Green Flash 12th Anniversary American Sour Pale
5 Green Flash To make the 12th Anniversary American Sour Pale – the Wort is soured in the kettle with Lactobacillus and then boiled with Mosaic, Nugget, and El Dorado hops. After fermentation with California Ale Yeast the beer is then dry hopped with the same three hops selected for fruity complexity. The result is a mild sweetness with prominently quenching lemony tartness and a uniquely complex fruity aroma. The creators of this beer are a Green Flash Genius Lab Team: Chris Weber, Fletcher Hillebrand with Brewmaster Chuck Silva.

4 Destihl Brewery Our Leipzig Style Gose undergoes a spontaneous fermentation, similar to Belgian style Gueuze/Lambic beers, and exhibits a complexity of acidic flavor and aroma contributed by wild yeast lactic fermentation. Lemon, lime and other citrus like qualities are present in aroma and on the palette, which is balanced by the spicy character of added coriander and a mineral mouthfeel from added sea salt.

4 Boulevard Brewing Co. Our version of an unusual, yet resurgent, beer style. It pays tribute to the pleasantly sour, slightly salty wheat beers that originated in Goslar and became popular in Leipzig, Germany around the late 1800’s. A great introductory sour beer, Hibiscus Gose receives coriander and sea salt during boiling, then we steep dried hibiscus flowers at the end to create a vibrant pink hue (really, though, it’s pink!). The result is a tangy, sweet and sour ale with a refreshing citrus character.

HiFi+LoFi Mixtape (Stochasticity Project)
6 Stone In this case, tanic, fruity, earthy flavors from Napa and Sonoma County reds colored our aged, higher alcohol (“HiFi” if you will) stock ale. We held that beer in our brand new foudres for four months before blending it with a fresh, lower alcohol version of the same stock ale exhibiting more of the bitterness from Apollo, Target and Fuggles hops (the “LoFi”) to create the first Stone Mixtape Ale to make it out of our brewery in great enough quantity for a multitude of our fans to enjoy. Oaky presence is followed by fruity yeast character. The malts shine mid-palate, combining with oak and a light berry fruitiness, followed by a dry, bitter finish.

Our Peach Kill all the Golfers came about because we just can’t leave a good thing well enough alone. The crew used a special peach tea instead of our normal black tea and lemon in a batch of Kill all the Golfers and this is what we got. We had some on tap at the 2014 Spring Mead Fest, and it was an instant hit. We had so many requests to bottle it that we just gave it in and did it.

Matt's Burning Rosids
7 Stone Appearance: Pours deep golden with a light haze that clears as the beer warms. Aroma: Belgian yeast clove-like aromatics and banana, followed by hints of smokiness. Taste: Fruit and spiciness from the Belgian yeast, followed by a more pronounced smoky woodiness. The finish is malty, with a touch of alcohol. There’s a really nice blend of flavors of here. Palate: Full bodied, but very dry with a lingering hop bitterness. Overall: It means a lot to us to have brewed this particular beer in memory of Matt Courtright. Matt was a very creative and talented brewer, and we knew that brewing this amazing recipe would be a wonderful way to pay tribute to everything Matt brought to us. I love how all the flavors play together very well, and this beer should be suitable for aging at cellar temperatures for several years.

9 Dogfish Head Inspired by a tale of a cask doctor who brought sluggish ales back to life by suspending a fig in them. Brewed from 100% Maris Otter pale ale malt, a blend of fine hops and conditioned on dates and figs. User Instructions: open bottle, pour contents into two snifters. Enjoy. ALTERNATIVELY: Walk hand-in-neck with bottle into the middle of the woods. Use shovel to dig 2x2 hole three feet deep. Seal bottle in plastic bag. Place in hole and pack with dirt. Memorize location and leave. Return exactly one year later. Dig up bottle, open and enjoy.

We start with heirloom pumpkins from Bodega Bay and roast them whole to create a deep sugary caramelization. We add the pumpkins to a bright brettanomyces-fermented beer, and then age it in oak casks with a selection of our favorite pumpkin pie spices; whole vanilla beans, cinnamon, ginger and nutmeg. Finally we blend the barrels back together to create a cohesive whole with rich layers of oak, spice and caramelized pumpkin.

Gruit is a blend of herbs that brewers added to their beer in the renaissance times if not before. Herbs are an essential ingredient in beer, both as a preservative and to counterbalance the bitterness and flavoring. Herbs were the only thing used prior to the extensive use of hops. Sacred Gruit ale is a pale ale brewed with primary combination of three mild to moderate herbs yarrow, sweet gale (myrtle) and marsh rosemary (wild rosemary). 7 Dogfish Head A modern update on a 9th century Finnish proto-beer. Brewed with rye, we caramelize the wort with white hot river rocks, then ferment it with a German Weizen yeast. In addition to juniper berries foraged directly from the Finnish country-side we added a sort of tea made with coriander, cardamom, lemon grass, Indian Black Tea, and ramps leaves. The spicing is subtle and balanced and Sahtea is a highly-quaffable, truly-unique brew with a full-mouth feel.

4 Virtue Cider Sidra de Nava is a tart, lemony summer Spanish-style sidra. The Asturias region produces 80% of the Sidra in Spain, and the Asturian summer is something to behold. The skies are clear and blue, the cafés full, and Sidra reigns supreme. Every café and Sidrería pours it – either ’thrown’ from a bottle or pipa (pitcher) held high overhead or straight from the kupela (barrel). Afternoon drinking under those blue skies leads to long nights of music, dancing and of course, more Sidra. The climax of the summer is the Festival de la Sidra in the village of Nava, held each July. Virtue’s Sidra de Nava is more tart than the dry ciders of England or funky cidre from France. 5 Dogfish Head Working with our archeologist friend Dr. Pat McGovern, this beer was created to incorporate the ancient ingredients and techniques described in Egyptian hieroglyphics. It was brewed to 11.4Plato with Emmer (an ancient form of wheat) and loaves of hearth baked bread and flavored with dom-palm fruit, chamomile, and zatar. Fermentation was carried out by a native Egyptian saccharomyces yeast strain captured by Sam and Floris during a recent trip to Egypt. ABV went from 5 to 4.5%.

6 Dogfish Head This beer is based on chemical analysis of pottery fragments found in Honduras which revealed the earliest known alcoholic chocolate drink used by early civilization to toast special occasions. the discovery of this beverage pushed back the earliest use of cocoa for human consumption more than 500 years to 1200 BC. As per the analysis, Dogfish head’s Theobroma (food of the gods) is brewed with Aztec cocoa powder and cocoa nibs, honey, chilies, and annatto (fragrant tree seeds). Theobroma is 9% ABV and will be available in Champagne bottles by late spring 2008.

6 Bell's Bell’s Wheat Project (2005) is an experimental foray into the development of complex flavors in beer. The Project comprises five new ales, four in series and one specialty strong product. The first four, Wheat 2, Wheat 4, Wheat 6 and Wheat eight are all made using 55% Wheat (either wholly or mostly malted) and 45% Barley malt. The barley malt makeup is exactly the same in each of the four and consists of three different malts. The total amount of grain in each of the four is also exactly the same, so each of them should have a virtually identical original gravity. The type and amount of hops in each of the four is exactly the same. And the processing through the brewhouse and fermentation is also exactly the same. The changing factors between the ales are the composition of the 55% of wheat used and the type and number of yeast strains used. In Wheat 2 the 55% of wheat is made up of two different kinds of wheat malt, and this ale is made with two different yeasts. Wheat 4 is made with four different wheats and four yeasts. Wheat six and eight made with six and eight wheats and yeasts respectively. The final product, Bell’s Wheat Love Ale, is made with the eight yeasts of Wheat eight and is a strong, but relatively light colored, “wheatwine.” 2. Your Father Smelt of Elderberries
6 Stone Stochasticity Project Your Father Smelt of Elderberries is a modern representation of a medieval beer recipe that used items such as elderberries for spicing before hops became the go-to bittering agent in brews. To complement the light tartness of the elderberries, the brewers at Stone Brewing added Target and East Kent Golding hops to keep with the English theme and mix in a little modern brewing practice with the old. Since malts during the medieval period were dried over peat or wood fires, peat-smoked malt was used to mimic the smoky note that these beers were believed to have. The final product is a 10.3% ABV ale that is guaranteed to be both a complex and unique drinking experience for craft beer fans. This offering can be enjoyed either fresh or aged when cellared at temperatures of 55°F or lower.
